Healthy Diet Day 7: Beets, Arugula, Feta Salad

Another day of fantastic home grown salad!  I  came to my mom place to pick up more her p-patch arugula and yellow beet.  Yellow beet is mildly sweet and it has great  nutrient source of potassium, fiber, folic acid,  and iron.  Today is weekend afternoon and I very tempted with eating out of dim sum or vietnamese noodle dish but I have still have a long way to make my 30 days mark.  Trying to stay focus is very hard.

Breakfast:  Weekend morning is family time at my house where I spend the time to make my boys special breakfast and spend with them.  I made pancake with homemade blackberries jams and eggs.  I had 1 pancake w/ butter, syrub, and jam and 1 egg. 1 cup of coffee too.

Snack: 2 left figs

Lunch: Freshly picked argula and yellow beets.  As for the beets, you can wrapped in foil paper and baked in the oven  for 40 mins at 400 degrees.  Set it out till cool and slice into pieces.  I made mine as the asian way, I boiled my beets and use the broth of the beet for soup. I boiled my for 25 mins and set out cool.  You need 1/2 cup of argula and 2 ounces of roasted pecan and 2 ounces of crumple feta cheese.  Vinaigerette receipe: 1) 1.5 teaspoon of extra virgin olive oil 2)1/2 teaspoon of balsamic vinegar, 3) 1/2 of red vine 4) a pinch of sugar, salt and ground pepper.

Snack:  Animal crackers

Dinner: Wonton noodles with fish balls.
