Healthy Diet Day 4: Arugula, Avocado, & Mango Salad

Hello there, this is day 4 and I feel great. High in energy and not carving for large dinner meal. This afternoon there was little stress with work  and I was craving for a Venti size Starbuck coffee frappacino with whip cream. I know that would make me happy but I was strong and overcame my craving.  Yes, I gave myself an extra star today.

Breakfast: 1) One cup of Starbuck Viva coffee w/ Vanilla cream and sugar 2)1/2 cup of oatmeal

Snack: 3 ounces of home roasted pecans.

Lunch: Another veggie from my mom garden dish, arugula. Recipe: 1) 1.5 cup of Arugula 2)half of the large avocado 3) a handful of mango  slices 4)1/5 of red onion 5) a small piece  chicken  breast from yesterday. Recipe for chicken from day 3.  Notes: Red onion – sliced and soaked into 1/3 cupwarm water with 2 teaspoon lime juice  for 10- 15 mins to reduce burning taste.   Recipe for vinaigrette:  1) 4 teaspoons of orange juice or 1/2 fresh squeeze oranges 2)2 teaspoons of lime juice  3) 3 teaspoons of extra virgin olive oil 4) 2 teaspoons of chopped cilantro 5) 1/4 teaspoon of cumin 6) 1/2 teaspoon of honey 7)2 pinches of salt and fresh ground pepper.

Delicious and filling salad!

Snack: 2 ounces of pecan and 2 large figs.  I just cannot helped myself with pecan.  OMG! It’s so addicting.

Dinner: I had 1 piece of chicken breast so I had it with 1/2 cup of rice and romaine letter and cucumber.  I also 1 cup of bitten squash shrimp soup.
