Healthy Diet Day 2-Romaine Lettuce with Pecan nuts

It’s hard to believe that I weigh 120 pounds so I weighed myself for a record keeping.  Most people does not believe that and always think I am at 100 pounds mark.   I told my sister-in-law what I weighed when I came over to her house for dinner. She just did not believe me like many people… she thought I was just messing with her. She dragged me upstair and make me stand on the scale and weigh myself infront of her. Yes, I proved it to her and it took her as a surprise.

This is my second day of having salad for lunch is a little hassle as I this my first from returning to work for few days off plus today is my off site visit but I managed to pack myself a healthy meal.

Breakfast: 1) 1 Cup of coffee with Vanilla cream and sugar 2)3 large figs

Lunch: Romain lettuce with home roasted walnut.  Recipe: 4 leaves of romain lettuce chopped,  2 boiled eggs, ~3 ounces of homemade roasted walnut, 1 small pickle, 1/2 large tomatoes, artichoke pickle (optional), ground pepper, 2 teaspoon of champagne pear vinageratte.

Homemade roasted Peacont:  I love home roasted pecan and they are very addicting.  I bought raw pecans from Costco and only roasted as needed for each usage.  I put 1/4 teaspoon of salt on warm pan on low heat and roasted it until it peacans turn light brown.  I let it sit out to for  1 hour  toand it’s ready to eat.  It a great source of snack.

Snack: 1/3 cup of blackberry, 1 piece of cracket, and 1 string cheese

Dinner:  2/3 cup of brown rice, some veggies and 4 ounces of lobster.

We need protient in our meal so eggs are loaded of protients as well as pecan.  Pecan contains high unsaturated fat which is the good fat but it has really high calories content.
